Jeff & Sam's Wedding Pies
these were my practice pies for Jeff & Sam's wedding on December 6, 2014
on the big day I made 5 of each: quince & apple crostata, lemon sponge, and chocolate layer pie
Waialua Estate
In January 2013 I visited home and discovered local chocolate growers in North Shore at Waialua Estate. Waialua partners with Bay Area's Gary Guittard (who I also had the pleasure of collaborating with at a chocolate tasting a few months before) to manufacture their single-origin chocolates.
Below you can see the beautiful, exotic cacao flowers and small green pods on the trees. When the pods are ripe they are harvested and the inside pulp and beans are removed. At this stage the beans are soft, I bite one open and was surprised at its bright purple center!
