The following posts for September 2015 highlight 4 years of celebrations, weeknight dinners, and good food enjoyed with friends and family. I also found pictures of a few plated desserts from when I worked in restaurants.
In January 2013 I visited home and discovered local chocolate growers in North Shore at Waialua Estate. Waialua partners with Bay Area's Gary Guittard (who I also had the pleasure of collaborating with at a chocolate tasting a few months before) to manufacture their single-origin chocolates.
Below you can see the beautiful, exotic cacao flowers and small green pods on the trees. When the pods are ripe they are harvested and the inside pulp and beans are removed. At this stage the beans are soft, I bite one open and was surprised at its bright purple center!
My blog project began as a portfolio of my studies at CCA and experience cooking at Aziza restaurant. Since then my cooking has evolved as much as my career, the only constant is my passion for delicious food.
